    Paleo lemon blueberry bread

    I’m definitely not paleo all the time, but I do try to limit carbs especially in things like baked goods whenever I can. I found this recipe on paleogrubs.com and thought it was definitely worth a try.

    Ingredients:

    • 2 bananas, small ripe (small is important or your bread will be too moist)
    • 1 cup blueberries, fresh
    • 1 lemon
    • 1/4 cup honey
    • 1/4 cup coconut oil (missing from photo)
    • 2 tbsp almond milk
    • 3 eggs
    • 2 cups almond flour
    • 1 1/2 tsp baking soda
    • 2 1/2 tbsp coconut flour

    Directions:

    • Preheat oven to 350F
    • Line an 8×4 inch loaf pan with parchment paper and set aside
    • In a bowl, combine the almond flour, coconut flour and baking soda. Set aside
    • In another bowl combine the eggs, almond milk, honey, coconut oil, mashed bananas and lemon zest
    • Pour the wet mixture into the dry and stir to combine
    • Gently fold in the blueberries
    • Pour the batter into the prepared loaf pan
    • Bake for 25 minutes until the top is golden brown, then tent with foil and bake for another 25-30 minutes or until a toothpick inserted in the center comes out clean
    • Remove from the oven and allow to cool completely before cutting
